This month's Cookie Carnival cookie is Toasted Almond Lemon Bars and is being guest hosted by Holly of Phemomenon. As soon as I saw the recipe, I knew exactly when I would make them - my parents were planning on visiting us around Easter, and my mother LOVES anything lemon.
The recipe turned out fairly well even though we actually didn't get to share much of it with my parents - inevitably we were full after dinner. The lemon topping was light and sweet. Definatley my favortie part. I don't cook too often with nuts and wasn't sure about the almonds in the crust, however my husband did like the flavor that they added.
Overall, it was a great first go at the Cookie Carnival. I'm excited to see what recipes future months will bring.

ReplyDeleteLucky you for discovering this recipe a while ago :) Despite some struggles with the crust, I loved the bars. I was skeptical about the nuts in the crust too, but I wound up liking the flavor they added.
