So... the picture isn't the greatest, but these were good! I have blogged before about how much we like tacos around here, and these were no different. We saw this recipe on blogchef.com, and my husband immediately declared that these would be on the menu. I can't say I blame him...
The other great thing about this recipe is that it comes together quick! The time estimate of 30 mintues was spot on, so these are easily something that can be made after coming home from work. Enjoy!
Lime Chicken Tacos
1-1/2 lbs. of boneless, skinless chicken breasts cut into small pieces
1/8 c. red wine vinegar
1/2 lime juiced (I used 2 Tbsp. lime juice)
1 tsp. sugar
1/2 tsp. salt
1/2 tsp. ground black pepper
2 green onions, chopped
2 garlic cloves, minced
1 tsp. dried oregano
10 (6 inch) flour tortillas
1 tomato, diced
1/4 c. shredded lettuce
1/4 c. Monterey Jack cheese
1/4 c. salsa
sour cream (optional)
Add a little oil to the pan and saute chicken over medium-high heat until done. Add vinegar, lime juice, sugar, salt, pepper, green onions, garlic, and oregano. Simmer for 10 minutes.
Warm tortillas and add chicken mixture evenly to each one. Top with cheese, tomato, salsa, lettuce, and sour cream.
