SMS: Peanut Butter Truffles
After having to miss last week's wonderful SMS strawberry-rhubarb pie due to final exams, I am glad to be back this week, but I have to admit that I am writing this post a little early for a couple reasons :-) First being as you are reading this, I am probably running my first full marathon! I've done a couple half-marathons before, but today is my first full. Hopefully it goes well! The second reason is that we have been out of state for a good chunk of this week closing on our first home. It's definitely been quite the week!
This week's host is Mara from Love Your Mother, and she chose peanut butter truffles. I have to admit that I'm not much of a chocolate or peanut butter fan, but I wanted to make these regardless because peanut butter and chocolate is a classic combination that many people enjoy.
The truffles themselves were really easy. You do have to plan ahead a little to allow them time to chill, but there really isn't much active time in this recipe. I did try a little bit of the unformed chocolate mixture. It was okay, but I'm probably not the best judge. The hubby told me that they are definitely more flavorful if you allow them to come to room temperature as Melissa suggests, so I would second that recommendation.
