June Cookie Carnival: Strawberry Shortcake Cookies

I was so excited when I saw the June recipe for the Cookie Carnival! I absolutely LOVE strawberries and will eat a whole pint in one setting. But to put them in cookies? I never would have came up with this.

The recipe is one of Martha Stewart's. It's a fairly simple recipe. I had no problems making them whatsoever. I did skip the parchment paper and just baked them straight on my baking stones with no problems with sticking.


The recipe does state that these are best the same day that they are made. This is no lie. I made these in the late afternoon one day. It has been rather humid around here lately, but they were already starting to get soft after dinner. On the other hand, when I took them into work the next morning, the entire batch was gone by 10:3o in the morning =-)

  1. Your cookies turned out lovely! I enjoyed these too, and didn't think they were too bad the second day, but I live in Phoenix, where humidity isn't a big problem!
