Barbecued Chicken Burritos
In honor of finals coming up, I thought I would post a series of quick, easy recipes that put dinner on the table in just a few minutes. This is the first of several that I'll put up in the next week.
I found this recipe here on eatingwell.com. Sometimes I feel like the stated times on recipes aren't really a true estimate of how long it's going to take you to make the recipe the first time, but this one was definitely right on. The listed time of 15 minutes was really all we needed to get food on the table!
Not only was it quick, but they were pretty good too! It's hard to go wrong with BBQ sauce, chicken, black beans, corn, and sour cream. While we didn't put it in the filling, I topped the burritos with a little bit of fresh cilantro and liked it so much that I think I'd add some to the filling next time. Barbecued Chicken Burritos

Ingredients:
4 c. shredded rotisserie chicken
1/2 c. barbecue sauce
1 c. canned black beans, rinsed
1/2 c. frozen corn, thawed
1/4 c. reduced fat sour cream
4 leaves romaine lettuce
4 10-inch whole-wheat tortillas
2 limes, cut in wedges
cilantro for garnish
Place a large non-stick skillet over medium-high heat. Add chicken, barbecue sauce, beans, corn, and sour cream; stir to combine. Cook until hot, 4-5 minutes.
Assemble the wraps by placing a lettuce leaf in the center of each tortilla and top with 1/4 of the chicken mixture. Fold in the ends and roll as you would a burrito. Slice in half diagonally and serve warm with lime wedges.
